After the wonderful success of Emily Leary’s, blogger at A Mummy Too, festive baking recipes we’ve teamed up once again to bring you and your tiny tots some deliciously healthy treats…perfect for the New Year. First up scrumptious sweet potato and bean burgers!
These mini veggie burgers with a crispy coating are quick and easy to make, so they’re perfect for a simple, tasty lunch.
Older babies and toddlers can enjoy a little sensory play by getting their hands into the mix to help form the burger shapes. It’s great fun!
Note, this recipe gives very gently flavoured burgers suitable for young palates, but if you want a little more kick, you can add extra garlic or even some paprika to taste.
To make the burgers, you’ll need…
- 1 can mixed beans, drained and rinsed
- 100g sweet potato
- 100g butternut squash
- tiny pinch salt
- pinch pepper
- 1 tsp garlic granules
- 1 tsp dried mixed herbs
- 100g golden breadcrumbs
- 100g plain flour
- 2 eggs
- small pitas/rolls to serve
Here’s what to do…
Preheat the oven to 200C (180C fan).
Cut the squash and sweet potato into chunks and boil until tender. Drain and cool, then place them in a bowl and mash together with the beans.
Mix in the salt, pepper, garlic and herbs, then divide the mixture into eight equal balls of mixture, patting into burger shapes.
To crumb the burgers, first toss them in the flour then dip them in the egg.
Toss them in the breadcrumbs until they’re well coated. Place on a lined baking tray.
Repeat with all eight burgers. Bake for 20 minutes until crispy. Serve in pitas or rolls with plenty of salad.
